Weekend Recipe: The Oaks Burger
This recipe from The Oaks Gourmet Market is easy to play around with: use the ingredients list as a guide, and use whatever proportions you like. The pineapple compote is an excellent condiment here (well, the truth is it's excellent anywhere), and makes this burger one of the best in L.A. Whip up this burger to toast the end of National Burger Month and the beginning of summer!
The Oaks Gourmet Market Burger
Makes one burger
Brioche Bun
80/20 Dry Aged Ground Beef with New York Steak Hamburger Patty
Tallegio Cheese
Black Forest Bacon
Red Onions
Sliced Tomatoes
Baby Arugula
Smoked Jalapeno Pineapple Compote (recipe below)
Smoked Jalapeno Pineapple Compote
Makes 3 cups
1 lb fresh pineapple, chunks
2 roma tomatoes, chopped
1 15oz can crushed tomatoes
2 oz worcestershire sauce
1 oz minced jalapeños
1 garlic clove
2 oz light brown sugar
1 oz sliced shallots or red onions
1 chipotle en adobo sauce from can
1/2 cup water
Combine all ingredients in a heavy bottom sauce pot, bring to a boil then reduce to a simmer
Continue to simmer, uncovered for 2 hours or until. let cool then pulse in food processor to desired consistency
Refrigerate till ready to use
