Recipe: Broccoli Stalk Salad with Goji Berries and Bacon

Here's a nutritious, paleo-friendly recipe that's a great way to use up those neglected broccoli stalks. The salad, courtesy of Kye's, packs in the superfoods with almonds and goji berries, but sneaks in a naughty bit of bacon, so that you don't feel too self-righteous eating it. Now that's our kind of dish!

Broccoli Stalk Salad with Goji Berries and Bacon
Serves 4

6 cups cut broccoli stalks
1 cup cooked bacon, loosely chopped
1 cup shredded carrots
1 cup red onions, thinly sliced
1/8 cup goji berries
1 cup sliced almonds
10 ounce mayonnaise
2 ounce agave
2 ounce Dijon mustard
3 tablespoons white wine vinegar

Peel the broccoli stalks, then cut lengthwise into thin slices using a mandoline.

In a bowl, toss together the sliced broccoli stalks, bacon, shredded carrots, red onions, goji berries, and almonds.

In a second bowl, whisk together the mayonnaise, agave, Dijon mustard, and white wine vinegar. Add creamy vinaigrette to salad and toss to coat. Add salt and pepper to taste.
